ARE THE MASTER WORDS

Observation, listening and patience are the key words for the development of great Champagnes wines.

 

It is by starting by resonating our wine-growing practices that we have changed our whole vision and our cultural practices.

 

We like to work with the earth, to touch it, to feel it and above all to listen to it. We feed her every year with fermented extracts and 5 clover essences to provide her with all the nutrients she needs.

 

Light scratching is also carried out every other row in some plots and 2 out of 6 rows for others between the vines and the rows in order to regulate the vegetation and promote good microbial functioning in the soil.

 

In order to promote biodiversity as well as the beauty of our landscapes, we have installed many hedges and small shrubs to revive our plots.

GRANDE RÉSERVE 2005

Whether 2000 or 2005, the range of Grande Réserve vintages is the result of exceptional years. An incredible delicacy coupled with an extreme freshness thanks to the absence of malolactic fermentation, makes its wines gastronomic champagnes par excellence.

Adorned with a beautiful honey yellow color, you will be won over by its aromas of stewed yellow fruits, almonds and candied apricots. A generous and smooth palate that will seduce you and transport you to the complex world of precious nectars. The 2000 will be more evolved with notes of prunes and candied apricots.

Blend: 75% Pinot Noir, 25% Chardonnay

Age of vines: Over 30 years old, facing south

Vinification: without malolactic fermentation, 100% stainless steel tank

Aging : minimum 180 months in the cellar - Year 2002 or 2005

An exceptional year which gave birth to an equally exceptional vintage.

 

Its aged gold color will take you to floral flavors blending candied citrus, caramel and pastries. The smoothness of its mouth will make you travel with indulgence in the privileged world of intense tasting.

 

A vintage which still retains all its freshness despite these 18 years spent in the darkness of our cellars.

VIEUX RATAFIA CHAMPENOIS

True treasure in its case, this ratafia has more than 20 years of waiting in our cellars to be discovered in its most beautiful elegance for your greatest pleasure.

 

With a magnificent orange color with copper reflections, its warm and generous mouth is a discovery of candied fruit with nuances of cinnamon, cocoa and almond stones mingling with scents of rare wood and macerated grapes.

 

Imagine yourself on a childhood trip to a confectionery, sometimes it is so easy to define such a complex product.

Blend: 100% Pinot Noir

Alcoholic volume: 18% vol.

Soléra method

Aged in barrels for 3 to 4 years.

Aging in cellar: min. 200 months

VIEUX MARC CHAMPENOIS

A treasure with old gold colors and reflections. A pleasant surprise to discover such a greedy nose. Imagine holding a bunch of freshly squeezed grapes blending aromas of prunes and nuts, but also currants.

​

Let it air out at room temperature, it will reveal its sensual nose of candied fruit and caramel with nuances of Bourbon de Tahiti vanilla on a cocoa finish.

Obtained thanks to the distillation of the marc (seeds, grape skin and stalk) after pressing, it is then kept in oak barrels for 5 years to obtain nice caramel and fruit notes.

Quail flambéed with marc de Champagne:

4 beautiful quails

100g smoked bacon

20 cl of old marc de Champagne

1 tbsp of olive oil and 20g of butter

2 sprigs of thyme, 1 bay leaf,

A few juniper berries and currants

20 cl of sour cream

Salt and pepper the inside of the quails and cut them open.

Heat the oil and butter in a sauté pan then put the quails to brown on each side.

Detail the breast in the sauté pan, let everything come back a little and sprinkle with old marc, then flambé.

Flavor them with herbs, berries and grapes.

Simmer over low heat, covered, for 20 minutes. then add the cream. It's ready !

COTEAUX CHAMPENOIS ROUGE 2019

Made from grapes from the Champagne appellation from the most beautiful hillsides where the vines will give the best of their expression.

 

This red wine is characterized by a bouquet of cherries and sour cherries with hints of elderberry and liquorice. The palate leaves a pleasant feeling of lightness.

 

It is made from the first cuvée in order to give it a beautiful aromatic power of quality.

Blend: 100% Pinot Noir

Alcoholic volume: 12% vol.

Carbonic maceration

Vintage: 2018

Mets & Ratafia pairings:

CS73, Let yourself be seduced by the latest vintage produced by the founder of the house, Cristian Senez. An exceptional year, a rigorous selection of the best grapes from our oldest plot and an aging of over 18 years in the cellar gave birth to an exceptional vintage.

A sober, elegant and luxurious dressing, a honey color with a golden reflection and an immense palette of gourmet flavors to taste. On the nose, our cuvée will win you over with its aromas of stewed fruits such as apricot, fig but also notes of hazelnut and almond. The palate is round and smooth with flavors of vanilla, caramel and roasted hazelnut.

LE CORNOYER 2014

"Le Cornoyer" is the name of a Pinot Blanc parcel, nestled in the heart of the Côte des Bar. Exposed, facing south, it is worked with respect for the soil and the environment, values dear to our house. An obvious fact: an isolated vinification, a unique bottle adorned with a sublime case.

 

Be surprised by its ample and explosive mouth followed by a splendid mineral finesse supported by a lemony attack with magical notes of Yuzu, white fruits and white peach. Its nose reveals a journey on the road to India with the scents of Combawa and nuances of Kumquats. Then a touch of anise and lime blossom will complete these intoxicating scents.

Blend: 100% Pinot Blanc

Terroir: Fontette, parcel of Cornoyer (clay-limestone)

Vinification: without malolactic fermentation, 100% stainless steel tank

Aging : minimum 74 months in the cellar (2014 vintage)
